Quality from the Marennes-Oléron Region
Fines de Claire oysters come from one of France’s best oyster regions: Marennes-Oléron on the Atlantic coast. What makes these oysters special is their finish.
What makes them different
Maturation in clay basins – After being cultivated in the sea, these oysters spend another 4 to 8 weeks in shallow clay basins, known as “claires”. These basins are full of plankton and algae that influence the taste.
Clear, mild taste – Fines de Claire oysters taste less intense than many other varieties. They have a fresh, slightly salty taste with a subtle sweetness. This makes them accessible to people who are not yet familiar with oysters.
We serve them raw with a little lemon and a simple vinaigrette. A good choice if you want to try oysters without starting with the strongest flavours.
